Third Wave Coffee has strengthened its leadership bench with the appointment of Sanjay Dutta as Chief Technology Officer (CTO), a move that underlines the coffee chain's growing emphasis on digital transformation and scalable infrastructure as it expands across India. The appointment was announced by the company through a LinkedIn post. Dutta brings more than 25 years of experience in enterprise technology, IT operations, cloud architecture, digital transformation and technology leadership across the quick service restaurant (QSR), retail, FMCG and food service sectors.
In his new role, Dutta will lead Third Wave Coffee's technology strategy, with a focus on building scalable technology platforms, strengthening digital capabilities and enhancing technology infrastructure to support the brand's next phase of growth. Prior to joining Third Wave Coffee, Dutta served as Chief Technology Officer at Theobroma Foods, where he led technology transformation initiatives, digital ecosystems and cloud-based infrastructure to support business expansion. He has also worked as a technology consultant, advising businesses across the restaurant, retail and supply chain sectors on technology strategy and digital adoption.
Earlier, Dutta held the position of Vice President – Technology at Gourmet Investments, where he led technology operations for brands including PizzaExpress and Chili's. Before that, he served as Head of IT for KFC and Pizza Hut at Sapphire Foods India, overseeing enterprise IT consolidation, ERP transformation, cloud modernization and payments integration.
Dutta also spent eight years with McDonald's India – North and East as General Manager – IT, where he led technology strategy initiatives related to digital ordering systems, payment technologies and IT standardisation. His previous experience includes technology leadership roles at Mitsui and Co India and Jaquar and Company.
The appointment comes at a time when restaurant chains and café brands are increasingly investing in digital infrastructure, customer experience technology, cloud-based systems and data-driven operations to support growth and improve operational efficiency. With Dutta joining the leadership team, Third Wave Coffee is expected to further strengthen its technology capabilities as it expands its footprint in India's competitive café, QSR and food service market.
