How Agility Tech and Taste Are Shaping the Future of Food Franchising in India
From Korean fried chicken in metros to desi fusion burgers in Tier 2 cities, brands are learning to adapt menus to local palates while ensuring consistency at scale.

India’s food business is reinventing itself at lightning speed. The days when growth meant opening more dine-in outlets are fading; today, success is powered by cloud kitchens, delivery-first formats, and agile multi-model strategies. But it’s not just the formats that are changing, consumer tastes are evolving rapidly, with cuisines shifting as per regional demand. From Korean fried chicken in metros to desi fusion burgers in Tier 2 cities, brands are learning to adapt menus to local palates while ensuring consistency at scale.

At the recently held FREX Conference in Bangalore, some of the most forward-looking leaders in the food franchising ecosystem came together to decode this transformation. The panel featured Mahesh Reddy, CEO, GOPIZZA India; MadhuKumar K Nair, Director of Business Deveopment, Biggies Burger, Beamer Brands; and Kulin Shah, Associate VP, Rebel Foods. The conversation was steered by Sachin Marya, MD, Franchise India, who guided the discussion on how technology, supply chains, and hyperlocal consumer preferences are reshaping the way food brands scale across India and beyond.

 How Food Giants Are Reinventing Growth Models

Rebel Foods, the world’s largest cloud kitchen company, showcased how the industry’s “delivery-first” pivot redefined scaling. “We realized 80% of our customers preferred delivery over dining in. That was the lightbulb moment,” said Kulin Shah. From shutting offline stores to launching cloud-first brands, Now the brand operates brands like Behrouz Biryani, Faasos, LunchBox, and Oven Story and a few more, Rebel built a multi-brand powerhouse that today spans hundreds of kitchens worldwide. Now, with Wendy’s dine-in partnerships and franchise-led expansion in Tier 2/3 towns, Rebel is moving omnichannel while also growing its D2C channels to reduce dependency on Swiggy and Zomato.

Biggies Burger, on the other hand, is writing India’s own QSR burger story. Beginning in 2011 with a single kiosk, it now operates 150+ outlets. “Burger consumption in India has grown drastically. We want to be the top Indian player, and capitalizing on regional flavors gives us a big advantage,” said Madhu Kumar. The brand has experimented with Korean-style offerings and hybrid physical + delivery formats, while carefully expanding through franchisees in metros and Tier 2 cities.

For GOPIZZA India, standardization and technology are the anchors of growth. With 70 outlets already and plans to hit 500 in three years, CEO Mahesh Reddy emphasized scalable models ranging from 30 sq. ft. kiosks to 2,000 sq. ft. cafes. From IoT-enabled supply chains that monitor temperature to AI-driven kitchen automation, GOPIZZA is proving that consistency can be delivered at scale.

 

Common Threads Driving the Future

Despite their different paths, Rebel, Biggies, and GOPIZZA echoed similar lessons that will define India’s food franchising future:

  • Multi-Format Scalability: From carts and kiosks to cloud kitchens and cafes, agility in formats enables deeper market penetration without heavy capex.
  • Tech-Led Efficiency: AI and IoT are reducing waste, standardizing recipes, and enabling rapid scale even with high staff attrition.
  • Balancing Aggregators with D2C: While Swiggy and Zomato drive volumes, commissions squeeze margins. Investing in D2C apps and loyalty channels is now critical.
  • Franchisee Profitability: Sustainable franchising depends on strong SOPs, supply chain control, and ensuring unit-level returns for partners.

The underlying message was clear: India’s food franchising sector is on the cusp of explosive growth. Fueled by young consumers, urbanization, and cultural trends from K-pop to OTT-inspired dining preferences, the next five years will transform the sector.

Whether it’s Rebel Foods’ cloud-first dominance, Biggies Burger’s localizing of a global favorite, or GOPIZZA’s efficiency-driven expansion, the panel agreed that agility, innovation, and franchisee collaboration will be the cornerstones of success.

As Mahesh Reddy concluded: “Every Indian state is like a country. The opportunities are limitless. For those looking at franchising in food, the next five years will be transformative.”
